White wines
The white grapes are harvested in the cool of the evening to maintain freshness. The juice is clarified immediately and fermented under controlled conditions to maintain consistency in quality, and to preserve the natural characteristics of the grape. The fresher and aromatic styles such as Semillon and Traminer are bottled immediately, while richer styles like chardonnay are matured as required.
Red wines
The reds are fermented on skins under controlled conditions to help extract colour from the berry. This process also contributes most positively to the body and mouthfeel of the wine. After optimal time on skins, the juice is drained and the secondary fermentation is allowed to finish off as clarified must. Red wines are matured in oak to further complex the aromas and soften the mouthfeel.
Each process is monitored and carefully looked over by the winemaker as they take great pride in nurturing the wine for optimum flavour development. Before bottling, the wines are expertly blended to add to the drinking pleasure by ensuring the best combinations of each batch reach your table. Bottling is done by state of the art equipment to ensure a quality and consistent product.
Willandra Premium
The winemaker selects premium grapes from some of the best regions of Australia. These wines are showcased in the Willandra Premium range. This limited release wine is keenly sought after by wine enthusiasts all over the world. Each vintage, year after year, exceeds all expectations.
The name “Willandra” is from Australian indigenous language meaning “little river”. It is also the name of the family vineyard. “Willandra” also has local historical significance, being the name of a national reserve in the region and a famous sheep property which has been an icon of colonial Australia.
Willandra Leeton Selection
Toorak Winery has a rich resource in quality wine grapes from the Leeton area, where the warm, dry summer climate produces wines with rich, ripe aromas and elegant varietal fruit characteristics keynoted in the Leeton Selection Wines.
The Leeton Selection wines are made from grapes exclusively grown around our home town of Leeton. The wines show regional varietal characteristics. Riverflats is our newest vineyard acquisition. This vineyard has been set up with the latest vineyard technology on a site specifically chosen for premium winegrowing.
